Ingredients needed:
1 gallon Cold Water
4 seeded Tomatoes, chopped
4 Celery stalks, in thick slices
3 peeled Carrots, slice them thickly
2 Onions, cut into wedges
2 washed Leeks, the white part only, also thickly sliced
2 Turnips, peeled and cut into wedges
1 Bell Pepper, red or green, stemmed, seeded and cut into chunks
1 Zucchini, trim the ends and also thickly sliced
3 Garlic Cloves
2 sprigs of Italian Parsley
1 tablespoon of Fresh Thyme, if you use dried Thyme, use one teaspoon
2 Bay Leaves
10 Whole Black Peppercorns
How to prepare:
To the cold water add these ingredients: tomatoes, celery, carrots, onion, leek, turnip, bell pepper chunks, and zucchini to stockpot. Stir in garlic cloves, thyme, parsley sprigs, bay leaves, and the peppercorns. And let it boil over medium high heat.
After it is boiled, bring down the heat to low and let it simmer for 2 hours. Now you will have to strain the stock through a cheesecloth and discard of the solids.
Voilá, ready to go to the table. If you’d like to freeze it for later, let it cool down to room temperature first.
Most people favorite soups are creams. Here’s how to prepare a Cream Soup Base that you can use to prepare any type of cream soups.
Ingredients needed:
½ cup of butter
2 cups of milk
6 tablespoon of all purpose flour
2 cubes of chicken bouillon
Grounded black pepper to taste
How to prepare:
Melt the butter in a saucepan and add the flour to make a paste. Now add the milk and the chicken cubes. Let it cook over low heat until it is thick. Add back pepper to taste. When adding the soup ingredients of your choice you need to add more milk, so that it will stay as thick as you like.
This is the base for any Cream Soup, now you can add any ingredients that you like to make your own personalize creamy soup. Go ahead and try it, name your soup and serve it for that special dinner everyone has been waiting for.
Now, let us go European. We stop by Italy to make an Italian Style Soup.
Ingredients needed:
2 tablespoons of Extra Virgin Olive Oil
1 chopped small White Onion
3 chopped Celery Stalks
1 can of Whole Peeled Tomatoes with liquid, 28 ounces
2 cups of Cold Water
1/4 teaspoon of dried Basil
1 can drained Chickpeas, 15 ounces
1/4 pound cooked Small Shape Pasta
How to prepare:
Heat over medium heat some olive oil in a stockpot. Sauté the onion and celery, until they are soft, this should take 5 minutes. Reduce the heat to low and add the tomatoes with liquid. Break part of the tomatoes with a wooden spoon. Pour in the cold water while stirring. Let it simmer for 10 minutes. Add the chickpeas, dried basil and cooked pasta. Let it simmer and will be ready in 10 minutes. Serve it hot.
